From Huskies To Husbands

I made my first ever batch of dairy free ice cream today.  My mom sent me the ice cream maker attachment for my KitchenAid mixer over the summer, but I hadn’t used it yet.  I think that the ice cream turned out OK.  A little sweeter than I really like, but I can adjust that in the future.  This recipe was from the box of powdered coconut cream that I had in the cupboard.  It probably isn’t a recipe that I will make again though as the box of powdered coconut cream is a little pricey and it only made a very small amount of ice cream.  Also, after eating it I started getting a headache and some nausea so I dug out the box and sure enough in the finest of print it had sodium caseinate in the ingredient list.  Somehow DH and I both missed it when we were picking it out, probably since it is in all kinds of different languages…. I hope I don’t have a full blown dairy episode from it :(  I don’t know that my body can handle that along with everything else right now.

Didn’t go for a drive and didn’t work on the craft nook either.  DH just wasn’t in the mood for anything other than vegging on the couch and watching movies and playing some computer games.  Oh well…. Maybe soon
