Quick Throw Together Pasta Salad

DH informed me today that we have a potluck at church tomorrow.  I wasn’t prepared for this news and hadn’t planned for what to make so I hadn’t purchased anything to make!  Supplies are running a little low around here on some things due to the financial issues caused by me not really having much work.  I know that I have to make something or the chances of me having something to eat at all are slim due to my dairy issues.  So I started rummaging around in the pantry and refrigerator and found some ingredients that I thought could be the start of something…

I found a jar of roasted red peppers (I get these for $1 a jar at the Dollar Tree), a package of Genoa salami (a find at the Dollar Tree for $1), a can of black olives (I know I bought these on sale so a $1 or less), a box of medium shell pasta (again I know I bought these on sale so $1 or less), and some scallions that needed to be used up.

So, I boiled the pasta and cooled it.  While that was happening I chopped up the salami, roasted red peppers, black olives, and scallions.  When the pasta was cooled I tossed everything together and thought now what!?  I need some kind of dressing or sauce for this pasta salad since it had become obvious to me that with the ingredients that was indeed what I had to make.  I returned to the pantry and found a packet of Good Seasons Italian Dressing mix, along with the last of my apple cider vinegar and some olive oil.  Great that will work!  Mixed up the dressing and tossed it with the pasta salad.  Hopefully it is enough dressing and it doesn’t get all dry before the pot luck.  If it does start to dry out I think I will just add some water and hope for the best!  I gave it a taste test and the flavors work together pretty well and I think that it will just taste even better the longer that it can sit and marinate.

I figure that the total price for all the ingredients was less than $7 and it is a huge bowl of pasta salad, surely enough that there will be some leftovers from the potluck.  Not too shabby considering it was a last minute throw together!
