Dairy Free Peanut Brittle & More

I made 4 batches of Dairy Free Peanut Brittle using the recipe from The Milk-Free Kitchen Cookbook.

I would recommend only making 1 batch at a time instead of making all 4 together like I did!!

Here is the recipe:

DAIRY FREE PEANUT BRITTLE

Ingredients

1 1/2 cups sugar
1/3 cup light corn syrup
3/4 cup water
2 cups dry roasted peanuts
2 tbs smart balance dairy free spread
1 tsp baking soda
3/4 tsp vanilla extract

Directions

 

 Lightly spray a large pan with a raised rim.
Mix the sugar, light corn syrup, and water in a saucepan; bring to a biol, and cook to 230, or until the mixture spinsa thread when a little is dropped back into the pan from a metal spoon.
Stir in the peanuts and continue to cook, stirring constantly, until the mixture just starts to darken, about 290.
Immediately remove the pan from the heat, and stir in the margarine and the baking soda.
When the margarine is melted, stir in the vanilla.
Pour the peanut brittle out onto the prepared pan, spreading it thin if possible.
When the candy is cool and hard (about an hour) break into pieces.

Makes 24 - 1 oz servings.
As for the rest of the list from yesterday… No cookies baked today - We aren’t sure that we will be able to get them into the school before the holiday break so it looks like the ones for that will be made after the holidays.  I think that idea might be even better though - like a surprise waiting when they get back from the holiday break.  I didn’t get to getting the Christmas cards ready to go yet either, but there is still time this evening.  I do plan on mailing out the packages for Christmas once DH gets home though!  I also did do some more searching for employment and work at home type stuff too.

I have been working on the list of holiday cookies I plan on making just for around the house though.  Right now I think I am going to do Dairy Free Chocolate Chip, Dairy Free Raspberry-Almond Bars, Dairy Free Brownies with Frosting, Dairy Free Shortbread Cookies, and Dairy Free Mexican Wedding Cookies.  Although that list is still subject to change.  Besides I have plenty of time on my hands now to figure it out and get it done!

The other thing that I am working on is the menu for Christmas dinner!  Here is the tenative menu:

  • Fresh Spring Mix Salad with Mandarin Oranges and a Ginger Dressing
  • Prime Rib Roast
  • Sauted Mushrooms and Onions
  • Dairy Free Sausage & Sage Stuffing
  • Dairy Free Poor Man’s Peirogi
  • Oven Baked Sweet Potato Fries
  • Fresh Green Beans Sauted with Shallots
  • Corn
  • Fresh Baked Rolls
  • Dairy Free Chocolate Layer Cake
  • Dairy Free Peanut Brittle
  • Dairy Free Holiday Cookie Assortment

I think that is it… LOL  I guess you could say that holiday meals are a big production at our house!!

Tomorrow I have to take a friend of ours to the county seat (60 miles each way) to take care of some things.  With that going on I don’t think that I will push myself too hard on a set list of things to get taken care of beyond that.  I might bake a batch of cookies if I get home early enough and nothing else is going on though.
